Non-Stamping Post - Caramel Popcorn!

I just wanted to pop in quickly and post a recipe that I've been asked for many times at several Stamping Around events  Whenever we are local (within driving distance that is) we like to have a few homemade goodies on hand for our Friday night stamping session.  One thing I love that just tastes better when you make it is caramel popcorn.  Seriously, this stuff is just addictive!!  So since I've had many people ask for the recipe I thought I'd post it here - maybe some more of you out there in blogland would like it!  It takes a bit of time, but the end result is so worth it!!  Happy snacking! :)

Carmel Corn

1 cup margarine (or butter)

2 c. brown sugar

½ c. light corn syrup

1 tsp salt


Combine above ingredients in a large saucepan.  Bring above to a boil, stirring constantly. Then boil 5 minutes, stirring constantly.

Remove from heat and add 1 tsp vanilla and ½ tsp baking soda.

Pour over 6 quarts popped popcorn (careful – it’s hot!!) and stir to combine. Spread on 2 greased cookie sheets. Bake for 1 hour at 250 stirring every 15 minutes. Store in air tight container.

  4. Oooo..I've had the caramel corn! YUM! And I spy whoopie pies too! OMW I haven't thought of those in a while...they are DELICIOUS!
